Caesar Salad with Seitan!

Serves 1-3 depending on appetite! 

For the salad, you will need:

  • 1 head of romaine lettuce
  • 1/2 a cucumber, largely diced
  • 2 large salad tomatoes, largely diced
  • 2 tbsp of capers
  • 1 bread roll cut into cubes or air fried (we like to use a Lidl high protein roll)
  • 1 largely diced Millard original seitan knot
  • 1/2 pack of Millard maple bacon flavour seitan shreds, air fried

For the sauce, you will need:

  • 200g Greek style soya yoghurt (Tesco plant chef or Alpro)
  • Juice of a lemon
  • Caper juice / brine
  • 1 tbsp garlic granules
  • 1 tbsp onion powder
  • 4 tbsp nutritional yeast
  • pink salt
  • cracked black pepper
  • a little water to thin

Method:

Add all the salad ingredients into a bowl (let the seitan shreds and croutons cool slightly so as not to wilt the lettuce). 

Mix the dressing ingredients together, adding the water to thin, if necessary.
